Menu I

Menu: $71.00 per person
Children’s Menu: $47.50 per person

Bars to be set up offering premium mixed beverages, Chocolate Martinis, Apple Sour Martinis, beer and wine, assorted soft drinks, water, and ice. After dinner liqueurs including Gran Marnier, Kahlua, Cognac and Drambuie.*

Waiters to greet guests as they arrive with silver trays of Martinis

Hors d'oeuvres to be passed on silver trays including:

  • Lollipop grilled lamb chops with mint pesto
  • Antipasto kebabs of cheese filled tortellini, sun-dried tomatoes and artichoke hearts
  • Phyllo triangles with feta and sun-dried tomatoes baked to perfection
  • Smoked salmon on Blini topped with chives, crème Fraiche and capers

Pasta Station with chefs cooking to order:

  • Choices of pasta including penne, ziti and rotini
  • Tender chunks of chicken
  • An array of fresh vegetables to choose from including peppers, mushrooms, onion, garlic and fresh basil
  • Pesto with basil garlic and pine nuts
  • Alfredo cream sauce
  • Fresh tomato basil sauce
  • Freshly Grated Parmesan cheese
  • Dried pastas and Chianti bottles with candles for ambience

Dinner buffet to be set up offering:

  • Whole Poached Salmon elegantly garnished with lemon scales and caviar, served with cucumber-dill sauce and cascading French baguettes
  • Chicken Picatta: tender medallions of chicken simmered in white wine sauce with fresh lemon and capers
  • Mozzarella and tomato salad tossed with fresh basil vinaigrette
  • Caesar’s Salad: crisp Romaine lettuce tossed with croutons and parmesan in creamy Caesar dressing
  • An elaborate bread display with a variety of rolls, including Tuscan rolls, and butter

Cocktail Buffet and Kid’s Buffet to be set up offering:

  • A fresh fruit and cheese display offering an array of imported and domestic cheese and gourmet crackers garnished with fresh strawberries and grapes
  • Meatballs Marinara
  • Mozzarella Sticks with marinara dipping sauce
  • Grilled chicken kebabs with honey mustard dipping sauce
  • Miniature Pizza Bagels
  • French Fries with Ketchup
  • Baby carrots, cucumbers wheels, celery sticks and cherry tomatoes served with Ranch dressing
  • Assorted sushi including salmon, yellowtail, tuna, and California Rolls served with soy sauce, pickled ginger and wasabi

Desserts:

  • Chocolate Fondue Station to be set up with chocolate flowing from a fountain accompanied by skewered strawberries, pineapples, melons, marshmallows and pretzel rods
  • Assorted cheesecakes including fruit topped cheesecake, praline cheesecake and marble cheesecake
  • Bananas Foster: A chef flambéing bananas to order in an orange sauce served with vanilla ice cream
  • Midnight layer chocolate cake

Hors d’oeuvres to be passed on silver trays including:

  • Miniature red bliss potato baskets with sour cream and chives
  • Seared tuna canapés served on a crispy fried won-ton with pickled ginger, wasabi and white radish
  • Chicken Polynesian: Chunks of chicken dipped in coconut batter served with chutney butter

Cocktail buffet to be set up offering:

  • Assorted marinated Spanish Olives
  • Celery sticks, baby carrots, sugar snap peas, and peeled cucumber wheels with herb dip
  • Manchego and assorted cheeses garnished with fresh strawberries and grapes accompanied by crackers, flat breads and cascading French baguettes
  • Ceviche spoons with guacamole served on shaved ice with cilantro garnish and lemon wedge

First course (Pre-set):

  • Blueberry Summer Salad: Blueberries with crumbled gorgonzola with mixed field greens and pecans tossed in a light raspberry vinaigrette
  • Assorted Tuscan rolls, breads and butter

Dinner buffet to be set up offering:

  • Halibut Veracruz: Filet of halibut served with fresh garlic, red, yellow and green peppers and olives in light cream sauce
  • Grilled lollipop lamb chops served with mint jelly and mango mint salsa at side

  • Chicken kebabs with red and green peppers and honey mustard dipping sauce
  • A Magnificent Fresh Fruit and Cheese Display: fresh strawberries flowing onto trays of mounded grapes and an array of domestic and imported cheeses including Brie en Croute with raspberry spread garnished with a variety of gourmet crackers
